Ingredients
3 (9-oz.) packages refrigerated cheese tortellini
2 c. cherry tomatoes, halved
1 large cucumber, cut into half moons
1/2 small red onion, diced
1 c. kalamata olives, halved lengthwise
1 1/2 c. crumbled feta
1/3 c. freshly chopped dill
2/3 c. extra-virgin olive oil
1/3 c. red wine vinegar
2 cloves garlic, minced
2 tsp. dried oregano
2 tsp. dried thyme
Kosher salt
Freshly ground black pepper
Preparation
Step 1Cook tortellini according to pasta instructions. Drain.Step 2Meanwhile, in a large bowl, whisk together olive oil, red wine vinegar, garlic, dried oregano, dried thyme, mustard, and season generously with salt and pepper. Add tomatoes, onion, cucumber, olives, and dill and stir until combined, then add cooked tortellini and stir until coated. Step 3Fold in feta and serve.
