Ingredients
3 tbsp. butter, divided
2 cloves garlic, minced
1 lb. medium shrimp, peeled and deveined
1 tbsp. dried oregano
Kosher salt
Freshly ground black pepper
2 tbsp. all-purpose flour
1 c. milk
3/4 c. dry white wine
1 c. feta, plus more for garnish
1 1/2 c. shredded mozzarella
2 c. cherry tomatoes, halved
1 c. halved kalamata olives
1/2 c. chopped cucumbers
12 oz. cooked fettuccine
Freshly chopped dill, for garnish
Preparation
Step 1In a large skillet over medium heat, melt 1 tablespoon butter. Add garlic and cook until fragrant, 1 minute. Add shrimp and dried oregano and season with salt and pepper. Cook until pink, 2 minutes. Transfer to a plate.Step 2To skillet add remaining 2 tablespoons butter. Add flour and cook until golden, 1 minute, then add milk and white wine and cook until thick, 3 minutes. Stir in feta and mozzarella until creamy. Return shrimp to skillet along with tomatoes, olives, and cucumbers. Step 3
Toss with cooked fettuccine and top with more feta and dill.
