Ingredients

1 c. water

2/3 c. packed light brown sugar

1/3 c. molasses

1 (1") piece ginger, peeled and grated or minced

7 whole cloves

5 allspice berries

1 (3") cinnamon stick

Ice 

1 1/2 oz. Kahlúa Coffee Liqueur

1 1/2 oz. vodka

2 oz. espresso

Simple syrup, light brown sugar, and candied ginger, for serving

Preparation

Step 1In a small saucepan over medium heat, bring water, brown sugar, molasses, ginger, cloves, allspice, and cinnamon to a boil. Cook until sugar dissolves, then reduce heat to medium-low and simmer, stirring occasionally, until slightly thickened, 10 to 15 minutes.Step 2Strain syrup into a heatproof container and let cool.

Step 1In a cocktail shaker, combine Kahlúa Coffee Liqueur, vodka, espresso, and 2 oz. gingerbread syrup. Fill shaker with ice and vigorously shake until outside of shaker is very cold, about 20 seconds.Step 2Dip martini glasses into simple syrup, then into brown sugar. Strain martini into prepared glasses. Garnish with candied ginger.
