2 Pop-Tarts, crumbled

6 tbsp. unsalted butter, cut into cubes and softened
1 large egg
1 large egg yolk
1 tsp. pure vanilla extract
1/3 c. buttermilk
Preparation
Step 1Preheat oven to 325°. Spray the bottom and sides of an 8"-x-8" baking pan with cooking spray.Step 2Make the streusel topping: Whisk sugars, cinnamon, salt, and butter. Stir in the flour and espresso powder until a crumbly dough forms. Fold in half of the Pop Tart pieces and set aside.Step 3Make the cake: In a large mixing bowl, combine the flour, sugar, baking soda, espresso powder, and salt. Beat in butter, one piece at a time, until the dough forms into pea-sized crumbles. Add the egg, egg yolk, vanilla, and buttermilk, beating for another minute or two. Pour batter into greased baking dish.Step 4Break the crumb topping into small, pea-sized bits and sprinkle it on top of the batter, then top with remaining Pop-Tart pieces. Bake until a toothpick inserted into the center comes out clean, 38 to 40 minutes. Let cool for 20 minutes before serving.
