Ingredients

2 tbsp. extra-virgin olive oil

2 garlic cloves, minced

1/8 tsp. cayenne

1 tsp. lemon juice

1/4 c. chopped fresh parsley, more for garnish

1 tsp. kosher salt

1 1 1/2 to 2 lb. salmon fillet, skin on

1 cherry tomatoes

1 lemon, sliced into rounds

Preparation

Step 1Preheat oven to 450 degrees F. Meanwhile, in a small mixing bowl, combine olive oil, garlic, cayenne, lemon juice, parsley, and 1/2 tsp. salt. Step 2Line a sheet pan with parchment paper and place salmon fillet skin side down in the center. Season fish with 1/2 teaspoon salt. Arrange tomatoes and lemon slices around salmon and drizzle with garlic and herb mixture.Step 3Place sheet pan in oven and roast until salmon is just cooked through, about 8 minutes. Heat broiler. Broil until tomatoes are just blistered and lemons have a slight char, about 5 minutes more.Step 4Arrange on a large platter and garnish with parsley. Serve immediately.
