Ingredients

3 blocks cream cheese, softened

1 c. sugar

3 large eggs

1/4 c. sour cream

1 tsp. pure vanilla extract

pinch of kosher salt

Black, purple, blue and teal food coloring

Sprinkles, for decorating

15 graham crackers

6 tbsp. melted butter

1 tbsp. sugar

pinch of kosher salt

Preparation

Step 1Preheat oven to 325º and grease a 8" or 9" springform pan with cooking spray. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then add sour cream, vanilla, and salt. Divide cheesecake mixture into four bowls.Step 2Color each bowl with a different food coloring: black, purple, blue and teal. Stir until color is completely combined.Step 3Make crust: Crush graham crackers and stir together with melted butter, sugar, and salt until completely moist. Step 4Press graham mixture into prepared pan until packed.Step 5Add spoonfuls of cheesecake mixture, alternating colors, until all used up. Run a knife through the colors to swirl. Step 6Top all over with sprinkles.Step 7Bake until slightly jiggly in the center, about 60 to 70 minutes.Step 8Let cool 1 hour in oven, then refrigerate until completely cool, at least 4 hours and up to overnight.
