Ingredients
12 mint leaves
1/4 c. granulated sugar
1/4 c. water
3 c. cubed seedless watermelon (about 15 oz.)
Juice of 2 limes
3 oz. (or more) white rum
Lime wedges, for serving
Preparation
Step 1In a small pot over medium heat, bring mint, granulated sugar, and water to a boil, stirring to dissolve sugar. Cook 1 minute, then remove from heat. Let cool.Step 2Strain syrup; discard mint. Transfer syrup to an airtight container and refrigerate until ready to use.Step 3Make Ahead: Syrup can be made 1 week ahead. Keep chilled.
Step 1On a large baking sheet or in a freezer-safe container, arrange watermelon in a single layer. Freeze until completely frozen, at least 2 hours or up to 1 month. Step 2Transfer frozen watermelon to a blender. Add lime juice, rum, and 1/4 cup mint simple syrup and blend until smooth. Taste and add more rum or simple syrup to taste. Step 3Divide mojito between glasses. Serve with a lime wedge.
