Ingredients

1 lb. ground chicken

1/2 c. panko bread crumbs

1/4 c. chopped chives, divided

2 cloves garlic, minced

1 egg

Kosher salt

Pinch cayenne pepper

1 tbsp. vegetable oil, for frying

1/2 c. hot sauce (such as Frank’s)

1/4 c. lightly packed brown sugar

2 tbsp. apple cider vinegar

Kosher salt

Red pepper flakes

Preparation

Step 1Form meatballs: In a large bowl, mix together ground chicken, panko bread crumbs, 2 tablespoons chives, garlic, and egg. Season mixture with salt and pepper, then form into small balls about the size of golf balls. Step 2Make sauce: In a medium bowl, whisk together hot sauce, brown sugar, and apple cider vinegar. Season with salt and red pepper flakes.  Step 3In a large skillet over medium heat, heat vegetable oil. Add meatballs in a single layer and cook until seared all over, 3 to 4 minutes per side. Add sauce and bring to simmer. Simmer until sauce has thickened slightly and meatballs are cooked through, about 10 minutes. Step 4Garnish with remaining 2 tablespoons chives and serve warm.
