Ingredients
2 c. all-purpose flour
1/2 c. powdered sugar
Pinch kosher salt
3/4 c. (1 1/2 sticks) cold unsalted butter, cubed
1 1/2 tbsp. cold water
Cooking spray
1 1/4 c. granulated sugar
4 large eggs
1/3 c. freshly squeezed lemon juice
1/3 c. butter, melted
2 tbsp. heavy cream
1 1/2 tbsp. lemon zest
1/4 tsp. kosher salt
Preparation
Step 1Preheat oven to 350º. In the bowl of a food processor, combine flour, powdered sugar, and salt and pulse to combine. Add butter and water and pulse until mixture is sandy and no large pieces of butter remain.Step 2Place an 11" tart pan on a medium baking sheet and grease with cooking spray. Press crust mixture into the bottom and sides of the tart pan in an even layer.Step 3Make the filling: In a large bowl, combine sugar, eggs, lemon juice, butter, heavy cream, lemon zest, and salt. Whisk until completely smooth and emulsified, then pour into crust.Step 4 Bake until filling is set (it can jiggle a little in the center), 26 to 30 minutes. Step 5Let tart cool completely and serve.
