Ingredients
4 large egg yolks
1/2 c. sugar
4 c. whole milk
2 tsp. instant espresso powder
2 tsp. pure vanilla extract
1/4 tsp. Kosher salt
2 c. Quaker Quick 1-Minute Oats
1/2 c. mascarpone cheese
Unsweetened cocoa powder, for dusting
Sliced strawberries, for garnish
Preparation
Step 1Whisk the eggs and sugar in the bottom of a medium saucepan, until lightened in color and well combined. Whisk the milk, espresso powder, vanilla, and salt into the egg mixture. Step 2Place the saucepan over medium heat and bring to a simmer, stirring occasionally. Continue to simmer over medium, stirring constantly, until the mixture thickens just slightly, 4 minutes. Step 3Stir the oats into the milk mixture and bring back to a simmer. Simmer until oats are cooked, stirring occasionally, 1 minute. Remove from the heat and stir in the mascarpone cheese, until melted and combined. Step 4Spoon into bowls, dust with cocoa powder, and top with sliced strawberries. Serve warm, or chill completely for a firmer custard and serve cold.
