Ingredients
3 lb. russet potatoes, peeled and cut into cubes
Kosher salt
1 (8-oz.) block cream cheese, softened and cut into cubes
4 tbsp. butter
1/2 c. milk
Freshly ground black pepper
Freshly chopped chives, for garnish
Preparation
Step 1In a large pot, cover potatoes with water and season with salt. Bring to a boil and cook until totally soft, 16 to 18 minutes. Drain and return to pot. Add cream cheese and use a potato masher to mash potatoes with cream cheese until smooth. Step 2Meanwhile, in a small saucepan over medium heat, melt butter with milk until warm. Pour mixture over potatoes and stir until completely combined and creamy. Season with salt and pepper. Step 3 Transfer potatoes to a serving bowl and season with more pepper and garnish with chives.
Can I substitute sour cream for cream cheese?Definitely! It will be tangier than if you use cream, but it will be equally delicious. You can also use mascarpone, Neufchâtel, of even plain full-fat Greek yogurt make great swaps for cream cheese.What herbs can I use in mashed potatoes? Chives are a classic pairing for mashed potatoes, but you’re free to flavor how you want. For hard herbs like thyme or rosemary, toss a few sprigs into the milk while it heats to infuse some of the flavors into the mashed potatoes. For tender herbs like chopped parsley or dill, sprinkle it on top before serving.
