Ingredients
1 c. (2 sticks) butter, softened
1 c. granulated sugar
1 c. packed brown sugar
1 tbsp. pure vanilla extract
2 large eggs
2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tbsp. ground cinnamon
1 tsp. kosher salt
1 c. semisweet chocolate chips
1 c. peanut butter chips
2 c. old-fashioned rolled oats
1 1/2 c. unsweetened coconut flakes
2 c. chopped pecans (8 oz.)
Preparation
Step 1Preheat oven to 375º and line 2 large baking sheets with parchment paper.Step 2In a large bowl, using a hand mixer, beat butter and sugars until light and fluffy, about 2 minutes. Slowly beat in vanilla extract and eggs.Step 3In a separate bowl, mix together flour, baking powder, baking soda, cinnamon, and salt. Stir into butter mixture. Fold in chocolate chips, peanut butter chips, oats, coconut, and pecans.Step 4Roll dough into 1 1/2" balls, placing them about 2" apart on prepared baking sheets. Step 5Bake cookies for 10 to 12 minutes, or until lightly golden.
