Ingredients
Cooking spray
1 c. all-purpose flour
3/4 c. unsweetened cocoa powder
1/2 tsp. kosher salt
1/2 c. vegetable oil
4 tbsp. butter, melted
1 c. packed brown sugar
1/2 c. granulated sugar
3 large eggs
1 tbsp. light corn syrup
1 tsp. pure vanilla extract
1 c. chocolate chips
6 tbsp. heavy cream

Preparation
Step 1Preheat oven to 350°. Line a 9”-x-9” baking pan with parchment and grease with cooking spray. In a medium bowl, whisk together flour, cocoa powder, and salt. Step 2In another medium bowl, whisk together oil, melted butter and sugars. Add eggs, corn syrup, and vanilla and whisk until incorporated. Add dry ingredients and stir until just combined. Pour into prepared pan and smooth top. Step 3Bake until a toothpick inserted in the middle comes out with a few moist crumbs, about 25 minutes. Let cool completely.Step 4Make ganache: Place chocolate chips in a heatproof bowl. In a small saucepan over medium heat, bring heavy cream to a simmer. Pour over chocolate chips and let sit 1 minute. Whisk until smooth. Step 5Pour ganache over brownies and smooth with an offset spatula, then top with rainbow chips. Place brownies in the refrigerator to set ganache, at least 20 minutes, before serving.
