Ingredients

2 sticks butter, softened

1 c. granulated sugar

1 c. firmly packed light brown sugar

2 large eggs

2 tsp. vanilla extract

1 tsp. baking soda

2 1/2 c. all-purpose flour

1 tsp. salt

1 1/2 c. crushed chocolate wafer cookies (such as Oreos)

Preparation

Step 1Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper.Step 2In a large bowl, combine butter and sugars. Beat with a handmixer until light and fluffy. Add eggs one at a time, and beat until evenly combined. Stir in vanilla. Step 3In a small bowl, whisk together baking soda, flour and salt. Add the dry ingredients to the wet ingredients and stir until just combined. Step 4Using a medium-sized ice cream scoop, place mounds of cookie dough on a the baking sheets, about 2 inches apart. (The cookies will spread.) Bake for about 10-12, until the edges of the cookies begin to turn golden. Step 5Let cool for 5 minutes on baking sheet, then transfer cookies to a wire rack to cool completely.
