1/2 c. Cookie Crisp cereal

Preparation

Step 1Preheat oven to 325° and butter 3 mini loaf pans.*Step 2Make cookie dough: In a large bowl, cream butter and brown sugar. Add milk, vanilla, salt and flour and mix until combined, then gently fold in chocolate chips and set aside.Step 3Make batter: In a large bowl, mix flour, sugar, baking soda and salt. Beat in butter, one piece at a time, until pea-sized crumbles form. Add the eggs, yolks, buttermilk and vanilla and beat until smooth, about 2 minutes more.Step 4Make the streusel: In a large bowl, combine sugar, brown sugar, cinnamon, salt, butter and flour. Once combined, mix with your hands until crumbles form, then add in Cookie Crisp cereal.Step 5Assemble: Divide half of the batter into loaf pans. Add equal amounts of tablespoon-sized pieces of cookie dough into each pan. Top with remaining batter, then streusel.Step 6Bake until golden, 53 to 55 minutes. Let cool completely before serving.
