1 tsp. oregano

1 tbsp. finely ground coffee

1 tsp. salt

1 16 oz boneless strip steak

1 tbsp. vegetable oil

1 c. brewed coffee

1/3 c. brown sugar

1/4 c. bourbon

2 tbsp. apple cider vinegar

1 tbsp. Worcestershire sauce

1/4 c. ketchup

2 tsp. orange zest

Kosher salt

freshly ground black pepper

Preparation

Step 1 Preheat oven to 400°. In a small bowl, whisk together coffee, chili powder, paprika, brown sugar, oregano, and salt. Rub spice blend all over steak, cover, and place in refrigerator to rest, 30 minutes.Step 2Meanwhile, make sauce: In a medium sauce pan, combine brewed coffee with brown sugar, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, and orange zest. Bring mixture to a boil, then simmer uncovered until reduced by 1/3, 25 minutes. Step 3In a large skillet over medium high heat, sear steak for 2 minutes on each side, or until a crust forms. Place skillet in oven and bake 5 minutes more at 400°, until meat thermometer inserted into the thickest part of the meat reads 125°. (For medium rare.)Step 4Let steak rest 10 minutes for slicing, then serve with coffee bourbon sauce.
