4 oz. spiced rum
4 oz. coconut milk
1/3 c. fresh pineapple chunks, plus more for garnish
splash pineapple juice
1 c. ice
2 maraschino cherries
Preparation
Step 1Add rum, coconut milk, pineapple chunks, and juice to a blender with ice. Blend until smooth.Step 2Pour into 2 glasses.Step 3Garnish each glass with a pineapple chunk and a maraschino cherry.
Freeze the pineapple first. If you have the time, freeze the pineapple chunks (or buy frozen) first. This will allow you to skip the ice and make your piña colada extra creamy. Your drink shouldn’t separate with frozen pineapple! What rum is best? We love spiced rum in our Piña Coladas.
