Ingredients

1 package frozen rice, microwaved according to package directions

1/4 tsp. kosher salt

Juice of 5 limes, divided

1/3 c. chopped fresh cilantro

2 cloves garlic, minced

1 tsp. ground coriander

Zest of 2 limes

1 tsp. honey

1 tbsp. soy sauce

1/2 tsp. crushed red chili flakes

1 lb. shrimp, peeled and deveined

1 tbsp. butter

1 avocado, sliced

Preparation

Step 1Mix microwaved rice with salt, 2 tablespoons lime juice, and cilantro until combined. Set aside.Step 2Prep shrimp: In a large bowl, combine garlic, coriander, lime zest, honey, soy sauce, remaining lime juice, and red pepper flakes and whisk. Add shrimp and toss until combined.Step 3In a large skillet over medium-high heat, melt butter. Add shrimp with marinade and cook until marinade cooks off by at least half and shrimp are fully pink. Step 4Assemble bowls: Top rice with shrimp, avocado, and pan juice.
