Ingredients

2 c. heavy cream

3 egg yolks

3 tbsp. granulated white sugar

Pinch kosher salt

1 tsp. pure vanilla extract

6 oz. bittersweet chocolate, chopped or broken into pieces (plus more for garnish)

Optional garnish: whipped cream and chocolate shavings

Preparation

Step 1In a medium saucepan, heat the cream, yolks, sugar, and salt over medium heat. Do not let it come to a boil. Continuously stir the cream mixture until it thickens enough to coat the back of a spoon, about 5 minutes.Step 2Remove the pot from the heat and stir in the vanilla. Add the chopped chocolate and set aside for about 3 minutes.Step 3Using a small whisk, begin stirring in the center of the pot until the mixture is homogeneous. (If you accidentally overheated the mixture and created lumps, you can remove the lumps by straining the mixture into a bowl.)Step 4Transfer the mixture to ramekins and refrigerate for at least 3 hours.Step 515-30 minutes before serving, let the pots de creme sit at room temperature. Serve with chocolate shavings and fresh whipped cream if desired.
