Ingredients
2 rolls biscuit dough
2 tbsp. melted butter
1 packet ranch seasoning mix
1 rotisserie chicken (or 3 boiled chicken breasts)
1/3 c. ranch dressing
1/3 c. shredded Mexican cheese
1/3 c. fresh salsa, juices drained
4 strips bacon, cooked and crumbled
Diced green onion, for garnish
Preparation
Step 1Preheat oven to 375°. Peel apart biscuits and use a knife to cut them into quarters. Step 2Place in a large resealable bag and top with butter and ranch seasoning mix. Seal bag and toss until biscuits are coated; pour into a greased 3-quart casserole dish.Step 3Use two forks to shred chicken meat into bite-size pieces. In a mixing bowl, toss chicken and ranch dressing; pour on top of biscuit mixture. Top with cheese, salsa, bacon and green onions.Step 4Bake until biscuits are lightly golden and cheese has melted, 20 to 22 minutes. Serve.
