Ingredients

1 (28-ounce) bag frozen French fries

4 tbsp. butter

1 carrot, diced

1 celery stalk, diced

1/2 large onion, diced

2 garlic cloves, minced 

2 tsp. fresh thyme, chopped

3 tbsp. all-purpose flour

1 1/2 c. low-sodium chicken broth

1/4 c. heavy cream

1 1/4 c. shredded rotisserie chicken

1 1/4 c. frozen peas

Preparation

Step 1Bake fries according to package instructions. Step 2Meanwhile, in a large skillet over medium-high heat, melt butter. Add carrot, celery, and onion and cook until soft, 8 to 10 minutes. Stir in garlic and thyme and cook 1 minute. Sprinkle with flour and toss to coat. Cook, stirring, 2 to 3 minutes.Step 3Whisk in chicken broth and heavy cream until smooth. Bring to a simmer and add shredded chicken and frozen peas. Simmer until warmed through.Step 4Serve over baked fries.
