Ingredients

3 tbsp. olive oil

1 lb. store-bought pizza dough, divided into 4 balls

2 small boneless skinless chicken breasts (about 1 lb.), leftover or cooked

3/4 c. grated parmesan, plus more for top (not shown in photo)

1 c. marinara

1/2 lb. fresh mozzarella, sliced

basil leaves

Preparation

Step 1Preheat oven to 450 degrees F. Line two baking sheet pans with parchment; set aside. Step 2Roll each piece of dough to 1/4 inch thickness, about 10 inches in diameter. Spread the cheese onto a plate and dip each chicken breast half into the cheese, coating both sides and place onto a piece of dough. Top with 1/4 cup sauce, some fresh mozzarella, and some basil leaves. Step 3Fold the dough over onto itself, creating a pocket. Seal the edges and then crimp them shut.Step 4To store, transfer to baking sheet and seal with a FoodSaver Vacuum Seal Roll and the FoodSaver FM5000 Series Vacuum Sealing System. Freeze for up to 3 months.Step 5To serve, remove baking sheets with calzones from bags and defrost. Brush with additional oil, and sprinkle with additional grated cheese. Bake until golden, 20 to 25 minutes. Let rest for 10 minutes before serving.
