Ingredients
1 1/2 c. panko bread crumbs
2 tbsp. freshly grated Parmesan, plus more for serving
kosher salt
Freshly ground black pepper
1 tbsp. extra-virgin olive oil, plus more for drizzling
2 large eggs, beaten
4 boneless skinless chicken breasts
1 c. shredded mozzarella
1 pt. cherry tomatoes
Torn fresh basil, for garnish
Preparation
Step 1Preheat oven to 350°. Step 2In a small bowl, mix together panko and Parmesan and season with salt and pepper.Step 3In a large skillet over medium heat, heat 1 tablespoon olive oil. Dredge chicken in egg, then panko, and add to skillet. Step 4Cook chicken until golden, 3 minutes per side. Top each breast with mozzarella and add cherry tomatoes to skillet. Drizzle with olive oil and season with salt and pepper.Step 5Transfer to the oven and bake until chicken is cooked through and cheese is melty, 15 minutes.Step 6Garnish with basil and Parm and serve over zoodles.
