Ingredients

3 bell peppers, tops and seeds removed, halved lengthwise

1 small head broccoli, cut into florets

2 c. shredded chicken

2 c. cooked white rice

1 1/2 c. shredded white cheddar, divided

2 cloves garlic, minced

1/2 tsp. dried oregano

Kosher salt

Freshly ground black pepper

Preparation

Step 1Preheat oven to 350° and grease a medium baking dish with cooking spray. Place halved peppers cut side up in baking dish.Step 2In a large bowl, stir together broccoli, chicken, rice, 1 cup cheddar, garlic, and oregano, and season with salt and pepper. Step 3Fill each pepper with chicken mixture, then top with remaining cheese. Fill the bottom of the baking dish with 1/4 cup water. Cover with foil and bake 20 minutes, then remove foil and bake 8 to 10 minutes more, until peppers are tender and cheese is melted and bubbly.
