Ingredients
2/3 c. low-sodium soy sauce
3 tbsp. honey
1 tbsp. Sriracha or chili sauce
1 tbsp. lime zest
1 tbsp. vegetable oil
2 chicken breasts, cut into 1” pieces
1 head of broccoli, cut into small florets
2 cloves garlic, minced
1 tbsp. freshly grated ginger
1/4 c. Sliced green onions
12 oz. cooked rice or udon noodles
Lime wedges, for serving
Preparation
Step 1Make sauce. In a medium bowl, whisk together soy sauce, honey, sriracha and lime zest.Step 2Meanwhile, heat oil in a large skillet over medium heat. Season chicken with salt and pepper then add to hot skillet. Sauté until brown on all sides and mostly cooked through, about 6-8 minutes.Step 3Add broccoli and toss with chicken until the broccoli begins to turn bright green and tender. Stir in garlic and ginger and cook until fragrant, about 1 minute.Step 4Add the sauce and bring to simmer. Reduce the sauce slightly and simmer until the chicken is completely cooked through and the broccoli tender. Add noodles and toss until completely combined.Step 5Fold in green onions and cilantro. Serve immediately with lime wedges.
