Ingredients
36 oz. beer
1 sweet onion, sliced
2 cloves garlic, minced
10 brats
10 buns
2 tbsp. butter
2 tbsp. all-purpose flour
4 oz. beer
4 oz. milk
8 oz. shredded Cheddar
1 tsp. smoked paprika
2 tbsp. freshly chopped chives
Preparation
Step 1In a large pot, add beer, onion, and garlic and bring to a boil. Add brats to liquid and simmer, 15 minutes, then remove brats from liquid and transfer to a hot grill. Grill until cooked through, 6 minutes per side. Step 2Meanwhile, prepare cheese sauce: In a small sauce pan over medium heat, add butter and whisk in flour. Cook 1 minute. Slowly add beer and milk to flour mixture, stirring constantly. Continue whisking over medium heat until mixture has thickened, about 3 minutes. Step 3Remove from heat and stir in cheese. Stir mixture until cheese has melted and sauce is smooth, then place cooked brats in buns and smother with cheese sauce. Sprinkle smoked paprika and chives on top.
