Ingredients

1/3 c. whole fresh basil leaves with stems attached for easy removal

Spice Islands crushed red pepper

3/4 tsp. Kosher salt

1 pt. cherry tomatoes, sliced or chopped

1/2 c. extra-virgin olive oil

4 cloves garlic, chopped

1 pkg. Green Giant® Veggie Hash Browns Cauliflower

4 oz. sliced mozzarella cheese

1/4 c. fresh basil, chopped or finely sliced

Preparation

Step 1Preheat oven to 425º.Step 2Combine whole basil leaves and stems, chili flakes, and salt in a heat safe bowl.Step 3Gently mash the basil with a wooden spoon to help release its oils, add the tomatoes and set aside. Step 4Place oil and garlic in a small heavy bottomed saucepan, heat on low for 8-10 minutes. As it heats you will see it bubble and cook the garlic, be careful not to brown or burn the garlic. Carefully pour oil and garlic over the prepared tomatoes, stir gently, and leave to marinate while the cauliflower hash browns toast.Step 5Place cauliflower hash browns on a sheet pan prepped with cooking spray. Cook in the preheated oven for 15 min. Carefully flip the cauliflower hash browns and return to oven to cook for 10 min. Remove pan from oven and place cheese on each cauliflower hash brown.Step 6Remove the whole basil from the marinated tomatoes, then spoon tomatoes and garlic oil on top of each cauliflower hash brown, return pan to oven, and cook for 4-5 minutes more until the cheese is melted.Step 7Garnish with the fresh chopped basil before serving.
