Ingredients

1 14-oz. sheet frozen puff pastry, thawed

1/4 c. Country Crock Original

2 large onions, thinly sliced into half moons

2 tbsp. brown sugar

kosher salt

Freshly ground black pepper

8 oz. goat cheese, crumbled

10 fresh thyme sprigs

Preparation

Step 1Preheat the oven to 400° and line a baking sheet with parchment paper. On a floured surface, roll out puff pastry to a 9"-x-13" rectangle, then transfer puff pastry to prepared baking sheet and prick all over with a fork.Step 2Bake until golden brown, 15 minutes, then let cool slightly.Step 3Meanwhile, in a large pot, warm Country Crock Original over medium-high heat. Add onions and cook until golden, 10 minutes, then add brown sugar and cook 5 minutes more. Season with salt and pepper.Step 4Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges. Sprinkle with goat cheese and scatter thyme sprigs on top.Step 5Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes. Let cool slightly, then cut into squares and serve.
